A mixed quarter of beef Dry aged for 21 days  10.25/lb hanging weight. Around 110lbs of meat. 

Typically it works out to be about 50% ground, 30% roasts and 20% steaks. We use a predetermined cut sheet, based on yielding the best cuts.
